Goldfinger Brewing Company in Downers Grove brews some the best lager beers this side of the Mississippi and this new one did not disappoint! the “Danube Swabian” a Vienna lager was as good as advertised, and it didn't hurt to have a Chuck's Wood Fired Pizza there to make the tapping of this lager that draws direct influence from the earliest recipes a success! My son Justin and I went to sample the beer and the pizza and I decided to do a Pop-Up review that you can watch on our review page.
It was cool night, and we pulled up to the converted trailer with the brick oven, a warm glowing flame from the wood inside cooking flatbread pizzas. I knew this was going to be a good night. After sampling the new tapping of the Danube Swabian Lager we decided to order a pizza. We went with the traditional pizza with red peppers, sausage and garlic with four cheese blend. The pizzas are a flatbread type and come in many styles and topping combinations. They also sell pretzels, coffee cake and cinnamon rolls. Going out and watching them cook my pizza was an experience. The wood at the back of the brick oven gave an off a warm glow and I watched as he put our pizza in the oven, rotating it occasionally to bake it just right. he told me that the crust was cold fermented and par-baked so it cooks up fast and evenly. I went inside the bar for another beer and the pizza was delivered in a box. The first bite caught me off guard as the crust was very crisp and had a great crunch, a lot different than the other flat bread pizzas I have had that have a doughy consistency. The amount of topping was perfect and did not overwhelm the crust. The red pepper really stood out as well as the well seasoned sausage that was crumbled on. All in all a very good wood fired pizza on a scale of 1 to 5 this is a solid 3.8. Chuck's Wood Fired Pizza works a lot of events and show up at different micro brewery's and would definitely recommend looking out for them and that great brick wood fired oven!
