union pizza review
Union Wood fired pizza

So, after waiting forever, the big day finally arrived when Alex and I were off to Evanston up north to catch a show at Space, this awesome little concert spot where we were going to see the legendary American Bluesman Walter Trout. I'd been there before and knew it was connected to a restaurant called Union; you actually walk through Union to get to the venue. We got there a bit early, snagged a sweet parking spot, and strolled in, all hyped up for an epic performance by an incredible guitarist. Showtime was at 8:30, and a quick glance at the clock showed we had an hour to kill, so we decided to hit up the bar at Union and grab a couple of beers. And then, bam! What we spotted after ordering our brews totally caught us off guard. There was this massive wood-fired oven with a crew of chefs whipping up some seriously mouthwatering Neapolitan-style pizzas. Alex and I exchanged looks, and I think we both had the same thought: should we go for one of those amazing-looking pizzas? The bartender reassured us that we'd have a piping hot, fresh pie in just 15 minutes. We quickly scanned the menu and settled on a sausage and pepperoni combo. They only came in one size, which seemed to be around 14 inches. About 10 minutes later, a piping hot, absolutely irresistible pizza was plopped down in front of us. The Chicago Pizza Guys dove right in with gusto! Our first bite confirmed that this was the real deal. The crust was spot on - a perfect mix of crispy and doughy, with a delicious flavor and a slight char at the edges. But the real star of the show was the insanely flavorful cheese that blanketed the pizza. We couldn't quite pinpoint the blend, but we both agreed it was scrumptious, with just the right amount to complement the toppings. The pizza wasn't overloaded with sausage or pepperoni, and that was just perfect. Everything worked together in perfect harmony, with the cheese stealing the spotlight, the charred pepperoni playing off the sweet sausage. Overall, a well-balanced pizza that was sliced into pie shapes. The sauce didn't overpower the pizza, and we both thought it had a lovely tomato taste. Sometimes sauces go overboard with garlic to amp up the flavor, but not this one; in fact, we could barely taste any garlic at all. Alex and I were seriously impressed with the pizza at Union, and I totally recommend it if you ever find yourself in Evanston. I know that whenever I'm catching a show at Space, I'll be there early to chow down on a pizza and sip on a cold one. Even though Neapolitan style isn't my usual go-to, this pizza really hit the spot. Later on, we caught Walter Trout's mind-blowing show that left us in awe. He's a top-notch blues musician with an incredible life story. Look him up and check out his journey if you don't believe me! Alex and I left Space that night feeling like the pizza and music gods were definitely smiling down on us!

I would rate Union pizza a 4.2,

Highly recommended!
